How to Make Egusi Soup with Smoked Fish (Authentic Nigerian Recipe)
Share
Egusi soup is one of Nigeria's most beloved dishes — a rich, hearty stew made from ground melon seeds and packed with bold flavors from smoked fish, leafy greens, and palm oil. Whether you're cooking for a family gathering or craving a taste of home, this step-by-step guide will walk you through making an authentic pot of egusi soup from scratch.
What Is Egusi Soup?
Egusi soup is a West African staple made from ground egusi seeds (melon seeds), cooked in palm oil with a blend of peppers, onions, crayfish, and protein. It's commonly served with fufu, pounded yam, eba, or semolina. Every Nigerian household has its own variation — this recipe uses smoked fish for a deep, smoky flavor that makes the soup truly unforgettable.
Ingredients
- 2 cups ground egusi (melon seeds)
- 1 lb Smoked Eja Panla Kika — our bestselling smoked fish, perfect for egusi soup
- ½ cup palm oil
- 2 cups chopped spinach or bitter leaf (efinrin)
- 2 seasoning cubes
- 2 tablespoons ground crayfish
- 2 scotch bonnet peppers (tatashe or rodo), blended
- 1 medium onion, chopped
- Salt to taste
- 2 cups meat or chicken stock (optional)
Step-by-Step Instructions
Step 1: Prepare the Smoked Fish
Rinse your Smoked Eja Panla Kika in warm water to remove any excess smoke residue. Break into large chunks, removing any bones. Set aside.
Step 2: Fry the Egusi
Heat palm oil in a large pot over medium heat. Add half the chopped onion and fry for 2 minutes. Add the ground egusi and stir continuously for 5–7 minutes until it turns golden and fragrant. This step is key — frying the egusi first gives the soup a richer, nuttier flavor.
Step 3: Add Stock and Peppers
Pour in your blended pepper mix and stock (or water). Stir well to combine with the fried egusi. Cover and cook on medium heat for 10 minutes, stirring occasionally to prevent sticking.
Step 4: Add the Smoked Fish and Seasoning
Add the smoked fish chunks, crayfish, seasoning cubes, and salt. Stir gently so the fish doesn't break apart too much. Cook for another 10 minutes on low heat.
Step 5: Add the Greens
Stir in your chopped spinach or bitter leaf. Cook for 3–5 minutes — you want the greens to wilt but stay vibrant. Taste and adjust seasoning.
Step 6: Serve
Your egusi soup is ready! Serve hot with pounded yam, fufu, eba, or semolina. Enjoy!
Tips for the Best Egusi Soup
- Use quality smoked fish: The smokiness of the fish is what gives egusi soup its signature depth. Our Smoked Eja Panla Kika is traditionally smoked and delivers authentic flavor.
- Don't skip frying the egusi: Raw egusi added directly to water results in a flat, grainy soup. Always fry it first.
- Adjust heat to your preference: Scotch bonnet peppers are spicy — reduce the quantity if you prefer a milder soup.
- Add Nigerian Asa Fish for extra richness: For an even more complex flavor, add a piece of Nigerian Asa Fish alongside the Eja Panla.
